Spanish Fried Peppers as Quick Tapas
Pimientos de Padrón are a classic in every Spanish tapas bar. These small green fried peppers are prepared in a flash and impress with their mild, slightly nutty aroma.
And the best part: You only need three ingredients.
Ingredients (for 2–4 people)

500 g Pimientos de Padrón

2–3 tbsp high-quality olive oil

Coarse sea salt

Prepare
Wash the Pimientos and pat them thoroughly dry (important so they don't splatter in the pan). -
Sauté
Heat a cast iron pan until very hot.
Add olive oil and then the whole peppers.Fry over high heat, turning regularly, for about 8–12 minutes until the skin blisters and darkens in places.

Season & Serve
Immediately after frying, sprinkle generously with coarse sea salt.
Serve hot.
