BBQ Finger Food with Bacon and Cheese Core
Moink Balls are one of the most popular BBQ snacks from the USA. The name is composed of “Moo” (beef) and “Oink” (pork) – meaning beef and bacon.
In this version, the classic Moink Balls become a cheeseburger snack: juicy meatballs with cheddar, pickles, onions and a spicy sauce – wrapped in crispy bacon.
Perfect as finger food for BBQ evenings, parties or as a highlight at your BBQ.
Ingredients (approx. 12–14 Moink Balls)
1 kg minced meat (half beef / half pork)
approx. 500 g bacon
2 gherkins
2 slices cheddar cheese
½ onion
1 tbsp ketchup
1 tbsp mustard
Spices
1 tsp paprika powder
1 tsp black pepper
1 tsp salt
½ tsp garlic powder
Preparation
1. Prepare Ingredients
Finely dice the onion and gherkins.
Cut cheddar cheese into small pieces or squares.
2. Season Minced Meat
Mix the minced meat with paprika powder, pepper, salt and garlic powder.
Knead well until a uniform mixture is formed.
3. Form Moink Balls
Form 12–14 portions from the minced meat (approx. 70–80 g per ball).
Lightly flatten the balls and place in the centre:
- some cheddar
- a few diced gherkins
- some onion
- a small dollop of ketchup and mustard
Carefully close the minced meat again and form into firm balls.
4. Wrap with Bacon
Lay two slices of bacon criss-cross.
Place the meatball in the middle and fold the bacon slices over it so that the meat is completely covered.
If necessary, secure with toothpicks.
5. Grilling
Preheat the grill to 180–200 °C indirect heat.
Place the Moink Balls on the grill and grill for approx. 20 minutes.
6. Glazing
Mix ketchup and mustard.
Brush the Moink Balls with this mixture after 20 minutes and sprinkle with the remaining diced gherkins and onions.
Grill for another 10–15 minutes until the bacon is crispy.
