Spanish classic from the paella pan
Paella is one of Spain's most famous dishes. The aromatic rice with vegetables, meat, and seafood is traditionally prepared in a large paella pan and is perfect for social gatherings.
This recipe combines tender chicken, shrimp, and seafood with saffron rice and Mediterranean spices. The paella can be prepared outdoors on a gas stove, grill, or camping stove – but it works just as well on a home stovetop.
Ingredients (for 6-8 servings)
3 onions, diced
3 cloves of garlic, finely chopped
500g diced chicken breast
400g shrimp (peeled)
250g mixed seafood
250 g peas
1 bell pepper, cut into strips
375 g paella rice
1.2 liters of vegetable or fish stock
1 g saffron (ground) or 2 saffron threads
1 tsp chili flakes
3 sprigs of rosemary
4–5 tablespoons olive oil
salt and pepper
1 lemon for serving
preparation
1. Prepare the ingredients
Dice the onions, finely chop the garlic, and cut the bell peppers into strips.
Rinse the shrimp and seafood if necessary and pat dry.
2. Briefly fry the seafood.
Heat the paella pan and add some olive oil.
Briefly sear the shrimp and seafood until lightly browned. Then remove from the pan and set aside.
3. Fry the chicken
Fry the chicken cubes in the same pan with a little olive oil until golden brown.
Add the onions and continue frying for a few minutes until they become translucent.
4. Add vegetables and rice
Add the bell peppers and peas and sauté briefly.
Add garlic and chili flakes.
Now add the paella rice to the pan and lightly toast it for 1-2 minutes so that it absorbs the aroma.
5. Add stock and saffron
Pour in the stock and add the saffron and rosemary sprigs.
Stir everything carefully once and then simmer over medium heat .
Important: Avoid stirring the rice afterwards if possible, so that the typical paella structure forms.
Season with salt and pepper.
6. Finish cooking the paella
Let the paella simmer for about 15-20 minutes , until the rice has absorbed almost all the liquid.
Now distribute the shrimp and seafood back over the paella and heat for a few more minutes until everything is cooked through.
7. Serve
Remove the pan from the stove or grill and let the paella rest briefly.
Garnish with lemon wedges and serve directly from the pan.
