Grilled Pizza – Recipe and Instructions

Crispy Pizza like from a Stone Oven

Pizza from the grill is a great way to add some variety to your BBQ. The high heat and a pizza stone create an exceptionally crispy crust – almost like from a traditional stone oven.

With the right dough, an aromatic tomato sauce, and your favorite toppings, grilled pizza is easy to make. Whether classic with salami or vegetarian with vegetables – there are no limits to creativity when it comes to toppings.

Ingredients

For the Pizza Dough (approx. 5–6 pizzas)

500 g wheat flour (type 405)

1 cube fresh yeast

300 ml lukewarm water

1 tbsp olive oil

1 tsp salt

1 pinch sugar


For the Tomato Sauce

400–500 ml strained tomatoes or tomato sauce

1 tbsp dried oregano

1 pinch sugar

Salt and freshly ground pepper


For the Topping

500 g grated cheese
(e.g., Gouda, Edam, or Emmental, optionally some mozzarella)

Toppings according to taste, for example:

Salami

Cooked ham

Mushrooms

Bell pepper

Onions

Tuna

Arugula

Olives

Anchovies


Preparation

1. Prepare the pizza dough

Crumble the yeast and dissolve it in lukewarm water with the pinch of sugar.

Put flour and salt in a bowl. Add the yeast water and olive oil.

Knead everything into a smooth, elastic dough (approx. 8–10 minutes).

Cover the dough and let it rise for 45–60 minutes until its volume has significantly increased.

2. Prepare the tomato sauce

Season the tomato sauce with oregano, sugar, salt, and pepper and stir well.

3. Prepare the grill

Preheat the grill with the lid to 250–350 °C.

Place a pizza stone on the grill and let it heat up for at least 15 minutes so that it stores enough heat.

4. Shape the pizza

Divide the dough into 5–6 portions.

Roll out each portion very thinly (approx. 3–4 mm) on a floured surface.

5. Top the pizza

First, spread the tomato sauce on the dough.

Then, distribute the cheese evenly.

Finally, add the desired ingredients.

6. Grill the pizza

Carefully place the pizza onto the hot pizza stone with a pizza peel.

Close the grill lid and bake the pizza for 5–8 minutes until the crust is crispy and the cheese is melted.


Serving

Remove the finished pizza from the grill, garnish with fresh arugula, basil, or a little olive oil as desired, and serve immediately.
