Succulent pork from the hot pot
Layered meat is one of the most well-known dishes from the Dutch oven and a true classic of outdoor cooking. Tender pork, flavorful bacon, aromatic onions, and BBQ sauce simmer slowly in the fire pot until everything is incredibly juicy and flavorful.
The principle is simple: meat, bacon, and onions are layered in a Dutch oven and then slowly cooked. The even heat of the cast-iron pot creates a particularly intense flavor.
This recipe was prepared in a 6-inch Dutch oven and is perfect for cozy barbecue evenings or outdoor cooking around a campfire.
Which meats are suitable for layered meat dishes?
Traditionally, pork neck is used because its high fat content keeps the meat particularly juicy. Leaner pork can also be used as an alternative, but neck provides the best flavor when braising.
Marinating meat – necessary or not?
You can season the meat right before cooking or marinate it the day before .
- Short version: Season the meat and use immediately.
- For a more intense version: Rub in the spice and let it infuse overnight in the refrigerator.

Ingredients (for approx. 6–8 servings)
2.5 kg pork neck (without bone)
Steak seasoning or BBQ seasoning
Salt
pepper
3 large onions
350 g bacon or smoked bacon (sliced)
250 ml BBQ sauce
preparation
1. Prepare the meat
Cut the pork neck into slices 1–2 cm thick .
Season the slices of meat generously with steak seasoning, salt and pepper.
2. Chop the onions
Peel the onions and cut them into thick rings or slices .
3. Layers in the Dutch oven
Lightly grease the Dutch oven.
Then layer the ingredients alternately upright :
- Meat
- Bacon
- onions
Repeat until the pot is full.
Finally, spread the BBQ sauce evenly over the top .
4. Prepare the Dutch oven
Allow approximately 24 briquettes to glow in the chimney starter .
For this recipe in a 6-inch Dutch oven:
- 8 briquettes under the pot
- 16 briquettes on the lid
5. Braising
Close the Dutch oven and let the layered meat simmer for about 2 to 2.5 hours .
Add new briquettes after about 90 minutes to keep the temperature constant.
The layered meat dish is ready when the meat is tender and falls apart easily.
Alternative: Preparation in the oven
Preheat the oven to 160 °C (top/bottom heat) .
Let the Dutch oven simmer in the oven with the lid closed for about 2–2.5 hours .
