Spaghetti with zucchini cream sauce

Quick Pasta Recipe with Creamy Vegetable Sauce

Pasta with vegetables is a true classic for quick cooking. These spaghetti with zucchini cream sauce are prepared in a short time and impress with a creamy sauce made from zucchini, onions, and herbs.

The diced ham provides an optional savory note, but can also be easily omitted – making the dish simply vegetarian.

Ingredients (for 4–5 people)

500 g spaghetti

1 large zucchini

2 red onions

2 cloves garlic

125 g diced ham (optional)

1 cup crème fraîche

100 g herb cream cheese
(alternatively, extra crème fraîche)

200 ml vegetable broth

2 tbsp olive oil

1 tsp dried oregano

½ tsp black pepper

Salt to taste

Fresh parsley for garnish


Preparation

1. Prepare ingredients

Wash the zucchini and cut into small cubes.

Peel and finely chop the onions and garlic.

2. Cook pasta

Cook the spaghetti in a large pot with plenty of salted water according to package instructions until al dente.

Drain, reserving some of the pasta water.

3. Sauté vegetables

Heat olive oil in a large pan.

Sauté onions and garlic until translucent over medium heat.

Add the zucchini cubes and sauté for a few minutes.

Optionally, add the diced ham and sear briefly.

4. Prepare sauce

Add crème fraîche and herb cream cheese to the pan.

Deglaze with vegetable broth and mix everything well.

Season with oregano, pepper, and a little salt.

Let the sauce simmer gently for a few minutes until creamy.

5. Add pasta

Add the cooked spaghetti to the sauce and mix everything well.

If the sauce is too thick, add some of the pasta water.


Serve

Divide the pasta among plates and garnish with freshly chopped parsley.

Optionally, grated Parmesan cheese also goes well with it.
