The right fuel
Only charcoal or charcoal briquettes should be used as fuel. Other materials such as resinous wood, pine cones, or paper are unsuitable, as harmful substances can be produced when burned.
Liquid fire accelerants such as gasoline or methylated spirits should absolutely be avoided. They can cause dangerous flare-ups. Solid firelighters, which allow for controlled ignition of the embers, are significantly safer.
The correct preparation
The thinner the pieces of meat are cut, the faster they cook on the grill and the shorter their exposure to heat. Heavily charred or burnt parts should be removed before eating.
Sausages, poultry and minced meat should always be cooked thoroughly to ensure that any potential germs are killed.

Fresh side dishes are an essential part of a healthy barbecue. A salad with bell peppers, tomatoes, carrots, or other vegetables provides plenty of vitamins and phytochemicals, making for a balanced meal.
