Mexican Street Food at Home
Whether for a quick lunch, meal prep, or a snack for guests – burritos are uncomplicated, filling, and versatile.
With juicy seasoned ground meat, beans, corn, and fresh toppings, they taste like they're from a street food market – only better.
You can buy the tortillas or easily make them yourself.
Ingredients
For the Ground Meat Filling

500 g ground beef

1 onion
-
2 cloves garlic
-
1 bell pepper
-
1 can corn (drained)
-
1 can kidney beans (drained)

1 can chopped tomatoes
-
1 tsp baking cocoa (for depth & color)

1 tsp paprika powder
-
1 tsp cumin
-
½ tsp chili powder (to taste)

Salt & Pepper

1 tbsp oil
For the Tortillas (optionally homemade)

500 g flour
-
225 ml lukewarm water
-
80 ml olive oil
-
1.5 tsp baking powder
-
1.5 tsp salt
For the Topping
-
1 cup sour cream or crème fraîche
-
150 g grated Emmentaler or Cheddar
-
1 head of lettuce
-
1 handful of nachos
Preparation
1️. Prepare Tortillas (optional)
Knead all ingredients into a smooth dough.
Cover and let rest for 15–20 minutes.
Divide the dough into 8–10 pieces, form into balls, and roll out thinly or flatten with a tortilla press.
In a hot, dry pan or on the griddle, cook for 1–2 minutes per side until light brown spots appear.
Keep warm in a cloth.
2️. Prepare Ground Meat Filling
Finely dice onions, garlic, and bell pepper.
Heat oil in a pan or Dutch oven.
Sear the ground meat vigorously until crumbly and browned.
Add onions and garlic and sauté until translucent.
Stir in bell pepper.
Season with paprika powder, cumin, chili, salt, and pepper.
Stir in baking cocoa (adds depth, does not taste sweet).
Add corn and beans.
Stir in chopped tomatoes.
Simmer everything over medium heat for 10–15 minutes until the mixture thickens.
3️. Fill Burritos
Spread 1 tsp of sour cream on a tortilla.
Top with lettuce, ground meat filling, cheese, and some crumbled nachos.
Fold in the sides and roll up from the bottom.
Optional: Briefly toast the burritos in a pan or on the grill to make them crispy.
