Clafoutis with cherries

French Oven Classic from the Dutch Oven

Clafoutis (pronounced: "Kla-foo-tee") is a traditional French dessert - somewhere between a casserole, pancake, and flan. Golden brown on the outside, soft and spoon-firm on the inside.

With sweet cherries, this classic becomes particularly aromatic. Perfect for the grill or oven – and ideal baked in a Dutch Oven lid.

Ingredients (for approx. 6–8 servings)

  • 700 g ripe cherries

  • 4 eggs

  • 100 g sugar

  • 1 packet vanilla sugar

  • 100 g flour

  • 250 ml milk

  • 1 pinch of salt

  • Some butter for the mold

  • Optional: powdered sugar for dusting


Preparation

1. Preparation

Preheat grill or oven to 180 °C (indirect heat / top and bottom heat).

Generously grease Dutch oven lid or baking dish with butter.

Wash cherries.
Traditionally, they are used with pits (for a more intense flavor).
Those who wish can pit them.

2. Make the dough

Whisk eggs with sugar, vanilla sugar, and salt until frothy.

Stir in milk.

Sift flour and stir in until a smooth, thin batter forms (similar to pancake batter).

3. Baking

Distribute cherries evenly in the mold.

Pour batter over them.

Bake in the grill or oven for approx. 30–35 minutes, until the clafoutis is golden brown and the center is slightly set but still appears soft.

It can still wobble slightly in the middle – it will firm up as it cools.

4. Serving

Let cool slightly.
Dust with powdered sugar and enjoy lukewarm.

Optional with:

  • Vanilla ice cream
  • Whipped cream
  • A touch of cherry liqueur

Dutch Oven Tip

In the Dutch Oven with briquettes:

  • approx. 6–8 briquettes at the bottom
  • 10–12 briquettes at the top
    Target temperature: approx. 180 °C

 

A simple dessert with French flair – minimal effort, maximum enjoyment.
