Fluffy Yeast Rolls from the Cast Iron Pan

Juicy blueberries, delicate yeast dough and a creamy cream cheese glaze – these fruit rolls are a real highlight on any coffee table.

Whether from the oven or from the grill in the cast iron pan: Served warm, they are simply irresistible.

Ingredients (approx. 10 rolls)

For the yeast dough:

  • 300 g wheat flour (type 550 or 405)

  • 15 g fresh yeast

  • 1 egg

  • 100 ml milk (lukewarm)

  • 50 ml water (lukewarm)

  • 45 g sugar

  • 30 ml neutral oil

  • ½ tsp salt

For the filling:

  • 3 tbsp blueberry jam

  • 200 g fresh or frozen blueberries

  • 15 g brown sugar

  • ½ tsp cinnamon (instead of ready-made spice mix)

For the glaze:

  • 20 g soft butter

  • 50 g cream cheese

  • 25 g powdered sugar


Preparation

1️. Prepare the yeast dough

Dissolve yeast in lukewarm milk with 1 tsp of sugar and let stand for 10 minutes until it foams slightly.

Place flour, remaining sugar, salt, egg, oil, and water in a bowl. Add the yeast milk and knead everything for 8-10 minutes until a smooth, elastic dough forms.

Cover and let rise in a warm place for about 60 minutes until doubled in volume.

2️. Fill & Roll

Roll out the dough into a rectangle (approx. 30 x 40 cm) on a lightly floured surface.

Spread with jam.
Distribute blueberries on top.
Mix brown sugar with cinnamon and sprinkle over.

Roll up from the long side.

3️. Cut & Let Rise

Cut the roll into pieces approx. 3–4 cm thick.

Line a cast iron pan with baking paper or grease it.
Place the rolls with some space in between.

Cover and let rise for another 30 minutes.

4️. Bake

Bake in a preheated oven at 180 °C top/bottom heat for approx. 25–30 minutes, until golden brown.

Alternatively, bake in the grill with indirect heat.

5️. Glaze

Cream butter, cream cheese, and powdered sugar until smooth.

Spread over the still slightly warm rolls – this way the glaze melts lightly and soaks in wonderfully.


💡Tips

  • Also delicious with raspberries or cherries
  • Add chopped almonds for extra crunch
  • Rolls can be prepared the day before and baked fresh in the morning
