Aromatic Vegetarian Grilled Side Dish
Tomatoes are an excellent ingredient for a light and aromatic grilled side dish. On the grill, they develop a particularly intense aroma and become wonderfully juicy. Together with garlic, onions, and fresh thyme, a Mediterranean side dish is created that pairs well with almost any grilled meal.
The grilled tomatoes are vegetarian, vegan, and quick to prepare. They turn out particularly well in a grill pan or a cast-iron dish, as the tomatoes cook evenly and nothing falls through the grates.
Ingredients (for approx. 6–8 people)
9–10 large tomatoes
1 onion
3 cloves of garlic
6 tbsp olive oil
½ tsp paprika powder (sweet)
½ tsp salt
½ tsp black pepper
1 bunch fresh thyme
Preparation
Wash and dry the tomatoes, then cut them in half.
Peel the onion and dice it finely. Also finely chop the garlic.
Place the tomato halves, cut-side up, in a grill pan or a cast-iron dish.
Distribute the onions, garlic, and thyme sprigs evenly over the tomatoes.
Drizzle everything with olive oil and season with paprika powder, salt, and pepper.
Place the grill pan on the grill and grill the tomatoes over indirect heat for about 8–10 minutes, until they soften and lightly color. The tomatoes should still retain their shape.
Serve directly from the grill.
