Grilled skewers – recipes with meat and vegetarian options

Varied skewer ideas for the grill

Skewers add variety to your barbecue and can be customized to your liking. Whether tender chicken skewers, vegetarian tofu and vegetable skewers, or crispy potato spirals – there are virtually no limits to your creativity when it comes to skewer grilling.

The advantage: The ingredients can be easily prepared, marinated, and then quickly grilled. This allows you to create aromatic grilled dishes for meat lovers and vegetarians alike in no time.

Here we show three popular variations:

  • Potato tornado skewers

Chicken and pepper skewers

Ingredients

600g chicken breast

3 bell peppers

marinade

1 clove of garlic

2 tsp Asian spice mix

1 tsp lemon juice

5 tablespoons rapeseed oil

3 tsp sesame oil

salt and pepper


preparation

Finely chop or press the garlic and mix it with lemon juice, oil, sesame oil and the spice mix to make a marinade.

Pat the chicken breast dry and cut into bite-sized cubes.

Wash the bell peppers, remove the seeds and cut them into large pieces.

Mix the meat and peppers with the marinade and let it marinate in the refrigerator for at least 1-2 hours .

Then alternately thread meat and peppers onto skewers.

Grill the skewers over medium heat for about 10-12 minutes , turning regularly, until the chicken is cooked through.

Tofu and vegetable skewers (vegetarian)

Ingredients

250g natural tofu

1 bell pepper

1 small zucchini

150 g cherry tomatoes

6 tbsp teriyaki sauce

1 tbsp rapeseed oil

1 tsp sesame oil

salt and pepper


preparation

Drain the tofu and cut it into approximately 2 cm cubes .

Mix with teriyaki sauce and marinate for about 30 minutes .

Wash the bell peppers and cut them into pieces.

Cut the zucchini into slices about 1 cm thick .

Thread tofu, zucchini, bell peppers and tomatoes alternately onto skewers.

Brush the skewers with a little rapeseed oil and grill on the hot grill for 6-8 minutes , until the vegetables are lightly browned.

Finally, season with salt, pepper and a little sesame oil.

Potato tornado skewers

Crispy potato spirals are a real eye-catcher on the grill and a popular side dish.

Ingredients

5 medium potatoes

80 ml rapeseed oil

1 tsp pepper

2 tsp garlic salt

5 sturdy barbecue skewers


preparation

Wash the potatoes thoroughly.

Insert a skewer through the center of each potato .

Using a knife, cut the potato in a spiral pattern around the skewer.

Carefully pull the spiral apart.

Brush with oil and season with garlic salt and pepper.

Grill the potato spirals in the indirect grilling area for about 35–45 minutes , until they are soft and crispy on the outside.


Serve

Serve the grilled skewers while still hot.

Potato spirals go particularly well with:

  • herb quark
