Cheese and chili bread from the Dutch oven

Crispy, flavorful & with melted cheddar

Do you love rustic bread – but with plenty of character?
This cheese and chili bread combines strong cheddar with fiery jalapeños and is baked wonderfully crispy in the Dutch Oven.

A rustic crust on the outside, a juicy crumb on the inside with a savory cheese core – perfect for BBQ evenings or as a highlight for your BBQ.

Ingredients (for 1 loaf)

Preferment (24 h in advance)

  • 150 g wheat flour type 550

  • 150 ml cold water

  • approx. 0.2 g fresh yeast (pinhead-sized)

Main dough

  • 450 g wheat flour type 550

  • 300 g preferment

  • 12 g salt

  • 6 g honey

  • 5 g fresh yeast

  • 220 ml cold water

  • 15 g soft butter

Filling

  • 300 g cheddar

  • 120–160 g jalapeños or fresh chilies


Preparation

1. Prepare the preferment (24 h in advance)

Mix flour, water, and yeast.
Cover and let ripen for 24 hours at room temperature (not warm!).
The preferment should have risen slightly and be aromatic.

2. Make the main dough

Mix flour, preferment, honey, yeast, and butter.
Gradually add water and knead for 8–10 minutes until a smooth dough forms.

Finally, knead in the salt.

Let the dough rise for 1.5–2 hours.
After 45 minutes, stretch & fold once.

3. Prepare the filling

Finely chop the chilies.
Dice 150 g cheddar.
Coarsely grate 150 g cheddar (for later).

4. Incorporate cheese & chili

Roll out the dough on a lightly floured surface.
Spread the diced cheese and chili over it.
Carefully fold the dough – do not knead too much so that the cheese does not leak out.

Form into a round loaf.

5. Proofing

Place the dough in the Dutch Oven lined with parchment paper
and let it rest for 30–45 minutes.


Baking in the oven

Preheat the oven with the Dutch Oven to 230 °C top/bottom heat.

  • 25 minutes with lid

  • 15 minutes without lid

Then add the grated cheese to the bread and bake for another 5–10 minutes until golden.


Baking with briquettes (Dutch Oven Outdoor)

  • 8–10 briquettes underneath

  • 16–18 briquettes on top

Baking time: approx. 40–45 minutes
For the cheese crust, add more top heat for the last 5–10 minutes.


Tip
If you like it even more intense, mix in some smoked cheddar or mountain cheese.
