Cheese pull-apart bread

Fluffy, savory & perfect for sharing

Whether at a BBQ, as a snack, or as a side dish – cheese pull-apart bread is always a highlight. Golden brown on the outside, soft on the inside, and with a creamy cheese filling – and the best part: everyone can simply pull off a piece.

Perfect for BBQs, parties, or cozy evenings.

Ingredients (for a 24 cm springform pan)

Dough

  • 600 g all-purpose flour

  • 150 ml warm water

  • 200 ml warm milk

  • 1 tsp salt

  • 2 tsp sugar

  • 1 packet dry yeast (7 g)

  • 50 g soft butter

  • 1 tbsp oil

Filling

  • 250 g cream cheese

  • 250 g grated mozzarella

  • 2 sprigs fresh thyme

  • 4 sprigs parsley

Optional

  • 1 egg yolk for brushing

  • 20 g melted butter for finishing

Preparation

1. Activate yeast

In a bowl, mix yeast, sugar, warm water, and 2 tbsp flour.
Let rest for 15 minutes until bubbles form.

2. Knead dough

Add remaining flour, milk, salt, butter, and oil.
Knead everything for 8–10 minutes until a smooth dough forms.

Cover the dough and let it rise for approx. 60 minutes until it has doubled in volume.

3. Prepare filling

Finely chop parsley and thyme.
Mix with cream cheese.
Have mozzarella ready.

4. Shape

Roll out the dough into a rectangle (approx. 40 × 30 cm).
Spread the cream cheese mixture evenly.
Sprinkle mozzarella over it.

Roll up the dough and cut into pieces approx. 4–5 cm thick.
Place the pieces close together in a pan lined with parchment paper.

Let rise for another 30 minutes.

5. Bake

Optionally brush with egg yolk.

Bake in a preheated oven at 180 °C top/bottom heat
for approx. 25–30 minutes until the bread is golden brown.

6. Finish

After baking, brush with melted butter and sprinkle with fresh parsley.

Tip
For extra flavor, add some garlic or grated Parmesan to the filling.
