Mediterranean sheep's cheese skillet on toasted bread

Quick Vegetarian Dinner from the Cast Iron Skillet

Looking for an easy dinner idea? This hearty feta skillet is prepared in minutes, wonderfully aromatic, and perfect for the grill, stovetop, or oven.

Juicy tomatoes, sweet peppers, and creamy feta melt together into a Mediterranean delight – especially good on crispy toasted bread.

Also ideal for using up leftover bread!

Ingredients (for 4 people)

  • 4 red bell peppers

  • 2 yellow bell peppers

  • 500 g mixed tomatoes (e.g., cherry tomatoes)

  • 600 g feta cheese

  • 1 red onion

  • 2 spring onions

  • 2 tbsp olive oil

  • 1 tsp paprika powder (sweet)

  • ½ tsp dried oregano

  • Salt & freshly ground pepper

To serve:

  • Fresh or slightly stale bread

  • A little butter or olive oil


Preparation

1️. Preparation

Cut bell peppers into strips.
Slice onion into half-rings.
Halve tomatoes.
Cut feta into large pieces or quarters.
Slice spring onions into fine rings.

2️. Sauté vegetables

Heat cast iron skillet and add olive oil.

First, sauté bell peppers and onions for 5–7 minutes over medium heat until softened and slightly charred.

Add tomatoes and simmer for another 3–4 minutes.

Season with paprika powder, oregano, salt, and pepper.

3️. Add feta

Gently place feta on top of the vegetables and heat for only 3–5 minutes.
It should soften but not completely fall apart.

Finally, sprinkle with spring onions.

4️. Toast bread

Brush bread slices with a little butter or olive oil and toast until golden brown in a pan or on the grill.


Serving

Place the hot feta skillet directly onto the crispy bread – or serve everything separately and let people assemble their own.


💡Tips

  • Drizzling with a little honey adds a subtle sweetness to the dish.
  • For more spice: add a pinch of chili flakes.
  • Also delicious with zucchini or olives.
  • Perfect as a vegetarian BBQ side dish or tapas.
