Mediterranean chicken with roasted vegetables from the Dutch oven

Simple, flavorful & perfect for outdoors

Juicy chicken drumsticks, roasted potatoes, sweet tomatoes, and Mediterranean herbs – this Dutch oven dish brings a holiday feeling directly to your garden.

The best part: Everything goes into one pot. No constant stirring, no stress – just let it simmer and enjoy.

Ingredients (4–6 servings)

  • 6 chicken drumsticks

  • 8 medium potatoes

  • 2 large onions

  • 1 red bell pepper

  • 1 head of garlic

  • 1 lemon

  • 15 cherry tomatoes

  • 3 tbsp olive oil

Spice blend (instead of ready-made spice mix):

  • 1 tsp paprika powder (smoked or sweet)

  • 1 tsp oregano

  • 1 tsp thyme

  • ½ tsp rosemary

  • 1 tsp salt

  • ½ tsp black pepper

Optional: fresh herbs for serving


Preparation

1️. Marinate chicken (ideally the day before)

Mix olive oil with spices and 2–3 finely chopped garlic cloves.

Rub the chicken drumsticks thoroughly and marinate covered overnight in the refrigerator.

Alternatively, let them marinate for at least 2–3 hours.

2️. Prepare vegetables

Cut potatoes into large wedges.
Slice onions.
Dice bell pepper.
Halve cherry tomatoes.
Lightly crush remaining garlic cloves.

Mix everything in a bowl with a little olive oil, salt, and the juice of half a lemon.

3️. Prepare Dutch oven

Distribute vegetables evenly in the Dutch oven.

Place chicken drumsticks on top, skin side up.

Place lemon slices between the vegetables.

4️. Cook

Cook at approx. 180 °C indirect heat for about 70–90 minutes.

Briquette distribution (9er DO as a guide):

  • 8–10 briquettes at the bottom

  • 12–14 briquettes on top

Important: Core temperature should reach approx. 80–85 °C.

5️. For crispy skin

In the last 15–20 minutes, increase the top heat or leave the lid slightly ajar to allow moisture to escape.

This will make the skin beautifully golden brown and crispy.


Serve

Sprinkle with fresh herbs and enjoy directly from the Dutch oven.

Serve with: Baguette or a light salad.


💡Tips

  • Also possible with boneless chicken thighs (cooking time will be shorter)
  • If you like it spicier: add chili flakes
  • Can be prepared perfectly in advance – ideal for guests
