Perfect for a quick weeknight meal or as a highlight for your barbecue.

Ingredients (for 3–4 servings)

  • 250 g Chow Mein Noodles

  • 250 g Chicken breast

  • 200 g Shrimp (peeled & deveined)

  • 2 Carrots

  • 1 Red bell pepper

  • 1 Onion

  • 2 Spring onions

  • 2 Eggs

  • 3 tbsp Sesame oil

  • 5 tbsp Soy sauce

  • 3 tbsp Oyster sauce

  • 1 Clove garlic (chopped)

  • 1 tbsp Fresh ginger (grated)

  • 1 tsp Curry (optional)

  • Black sesame seeds

  • Salt & Pepper

  • Fresh cilantro or parsley

Preparation

1. Prepare the noodles

Cook chow mein noodles al dente according to package instructions or pour hot water over them.
Drain and set aside.

2. Prepare the ingredients

Cut chicken into thin strips.
Pat shrimp dry.
Cut vegetables into fine strips or cubes.

Whisk soy sauce, oyster sauce, garlic, and ginger in a small bowl.

3. Fry the chicken

Heat the wok over high heat.
Add 1–2 tablespoons of sesame oil.

Sear the chicken (approx. 3–4 minutes) until cooked through.
Remove and set aside.

4. Fry the shrimp

Add a little more oil.
Fry shrimp for 1–2 minutes per side until pink.
Also remove and set aside.

Do not overcook – otherwise they will become tough.

5. Vegetables & Egg

Sauté vegetables in the wok for 3–4 minutes until crisp-tender.

Crack eggs into the center and let them set briefly.
Then mix everything together (like with fried rice).

6. Combine everything

Return noodles, chicken, and shrimp to the wok.
Pour the sauce over them.
Toss everything vigorously.

Finally, sprinkle with black sesame seeds and spring onions.

Tip
If you like it spicier, add some chili oil or sriracha.
