Pulled pork stew from the Dutch oven

Hearty BBQ stew with tender pulled pork

Pulled pork doesn't always have to end up in a burger. In this hearty pulled pork stew cooked in a Dutch oven, the tender meat is combined with vegetables, potatoes, and a spicy BBQ tomato sauce.

This recipe is especially handy if you have leftover cooked pulled pork. In a short time, you can create a hearty, aromatic stew that's ideal for outdoor cooking, barbecues, or cozy autumn days.

Ingredients (for approx. 6 people)

500g pulled pork (fresh or thawed)

1 small can of chopped tomatoes

1 small can of corn

1 pack of sauerkraut (BBQ or mildly seasoned)

1 large zucchini, roughly diced

500g potatoes, roughly diced

2 medium onions, finely diced

2 cloves of garlic, chopped

100 ml BBQ sauce

1 liter of beef broth

3-4 spritzes of liquid smoke (optional)

1 tsp chili powder or chili flakes (to taste)

1 bunch of chives

salt and pepper


preparation

1. Sauté the vegetables

Heat the Dutch oven and add some oil.

Sauté the onions and garlic in it over medium heat until translucent .

Add the diced potatoes and zucchini and sauté for a few minutes.

2. Prepare the stew

Add the chopped tomatoes, BBQ sauce, and sauerkraut.

Mix everything well and then pour in the beef broth.

Now add the corn.

3. Seasoning

Season the stew with liquid smoke, chili powder, salt and pepper.

Stir everything well.

4. Add pulled pork

Roughly shred the pulled pork and add it to the stew.

Close the Dutch oven with a lid and let the stew simmer gently for 20-30 minutes , until the potatoes are soft.

Stir occasionally.

5. Serve

Finally, fold in the finely chopped chives.

Taste the stew again and serve hot.

These go particularly well with:

  • fresh bread
  • Baguette
  • or toasted farmhouse bread
