Asparagus tart with feta from the Dutch oven

Quick Spring Recipe with Green Asparagus

If you need a quick meal during asparagus season, this tart is just right. Crispy green asparagus meets a creamy egg and cream mixture and savory feta – uncomplicated, flavorful, and perfect for family or guests.

With ready-made dough, this dish is on the grill in no time. Of course, it also works in the oven.

Ingredients (for 4–6 people)

  • 1 roll of ready-made pizza dough or tart dough

  • 400 g green asparagus

  • 2 onions

  • 2 cloves of garlic

  • 200 g feta

  • 3 eggs

  • 200 ml cream

  • 50 ml vegetable broth

  • 1 tbsp olive oil

  • Salt & Pepper

  • 1 tsp oregano


Preparation

1. Preparation

Line a Dutch oven lid or an oven-safe dish with parchment paper.

Place the dough inside, pull up the edges slightly, and prick the bottom several times with a fork.

2. Prepare the asparagus

Remove woody ends.

Cut the asparagus into 3–4 cm pieces.

Optional for extra tenderness: Blanch the asparagus in boiling salted water for 2–3 minutes, then drain.

3. Prepare the filling

Finely chop the onions and garlic and sauté them in a little olive oil until translucent.

In a bowl, whisk together the eggs, cream, and vegetable broth.

Season with salt, pepper, and oregano.

Stir in the sautéed onions.

4. Assemble the tart

Distribute the asparagus pieces evenly over the dough.

Crumble the feta coarsely and sprinkle it over.

Carefully pour the egg and cream mixture over it.

5. Bake

Bake at 180–200 °C indirect heat for approx. 30–40 minutes, until the filling is set and the surface is lightly golden brown.

In a Dutch oven with briquettes:

  • 5–6 on the bottom
  • 10–12 on top

Let rest for 5–10 minutes before slicing.


💡Tip

For even more flavor:
Add a few halved cherry tomatoes or some lemon zest.

Also delicious: toasted pine nuts as a topping.
