Currywurst with fruity curry sauce

Classic snack, homemade

Schimanski-Teller, Mantaplatte, or simply "Curry with Fries" – currywurst is cult. The fruity version with apple and pineapple is currently particularly popular.

Here's an easy recipe for a homemade curry sauce with classic curry powder – spicy, slightly sweet, and perfectly balanced.

Ingredients (for 4 servings)

  • 4 sausages

  • 1 medium onion

  • 1–2 tbsp olive oil

  • ½ fresh pineapple (alternatively 200 g canned, well drained)

  • 1 apple (tart, e.g., Boskop)

  • 2–3 tbsp curry powder (depending on intensity)

  • 70 ml orange juice (or 50 ml cola for more sweetness)

  • 500 ml strained tomatoes

  • 1 star anise

  • Salt & pepper

  • a little parsley

Optional:

  • 1 tsp paprika powder

  • 1 tsp brown sugar

  • 1 pinch chili for a slight heat


Preparation

1️. Prepare the sauce

Dice pineapple and apple into small pieces.
Finely chop the onion.

Sauté the onions in olive oil until translucent.

Add pineapple and apple cubes and sauté for 2–3 minutes.

Stir in curry powder (and optionally paprika powder) and roast briefly – this develops the aroma.

Deglaze with orange juice (or cola).

Add strained tomatoes and mix everything well.

2️. Simmer & Season

Add star anise.

Simmer the sauce gently for 10–15 minutes.

Remove star anise.

Purée the sauce until smooth.

Season with salt, pepper, and optionally a little sugar.

3️. Prepare the sausages

Lightly score the sausages.

Fry in a pan or on the grill over medium heat for about 8–10 minutes until golden brown all around.

Do not grill too hot, so they remain juicy inside.

4️. Serving

Slice sausages.

Pour hot sauce over them.

Optionally sprinkle with some curry powder and chopped parsley.
