The ultimate bacon bomb from the grill

Stuffed Meatloaf with Pasta & Cheese

Juicy ground meat, creamy cheese filling, savory bacon, and smoky BBQ sauce – this bacon bomb is true BBQ soul food. Perfect for a crowd and a highlight from the cast iron roaster or Dutch Oven.

Crispy on the outside, juicy and cheesy on the inside – that's how a bacon bomb should be.

Ingredients (for 6–8 people)

  • 1.5 kg ground beef or mixed

  • 800 g bacon

  • 120 g macaroni

  • 200 g cheddar, grated

  • 250 g mozzarella

  • 200 ml cream

  • 2 onions, finely diced

  • 3–4 cloves garlic, minced

  • Jalapeños (to taste)

  • BBQ sauce

Spices for the ground meat:

  • 2 tsp salt

  • 1 tsp black pepper

  • 1 tsp paprika powder (smoked or sweet)

  • 1 tsp garlic powder or some fresh garlic


Preparation

1. Prepare bacon weave

Weave a bacon lattice on baking paper.
This makes rolling easier later.

2. Pre-cook pasta

Cook macaroni in well-salted water until al dente (1–2 minutes less than package instructions).
Drain and set aside.

3. Prepare meat mixture

Knead ground meat well with salt, pepper, paprika powder, and garlic (2–3 minutes).
Kneading helps the meat bind better.

Form into a rectangle about 1–1.5 cm thick on baking paper.
It should be slightly smaller than the bacon weave.

4. Prepare cheese filling

Sauté onions and garlic until translucent in a pan.

Deglaze with cream.

Stir in cheddar and let it melt.
Season with salt and pepper.

5. Fill & Roll

  1. Spread macaroni over the ground meat rectangle.
  2. Pour cheese and cream mixture over it.
  3. Tear mozzarella over the top.
  4. Optionally add jalapeños.

Now carefully form into a firm roll using the baking paper.
Seal the ends well.

Place the meatloaf roll onto the bacon weave and roll it completely.

6. Grilling

Prepare grill for indirect heat 160–170 °C.

Place bacon bomb in the cast iron roaster or directly on the grates.

Brush with BBQ sauce.

Cooking time: approx. 90–120 minutes, until an internal temperature of 70–72 °C is reached.

Glaze again with BBQ sauce in the last 20–30 minutes.

7. Rest

After grilling, let rest for 10–15 minutes for the cheese to set.


Serve

Slice and serve with:

  • Coleslaw
  • fresh baguette
  • salad
  • baked potatoes

serve.
