Grilled skewers – recipes with meat and vegetarian options

Varied Skewer Ideas for the Grill

Grill skewers bring variety to the grill and can be put together individually. Whether tender chicken skewers, vegetarian tofu-vegetable skewers, or crispy potato spirals – there are hardly any limits to creativity when grilling skewers.

The advantage: The ingredients can be well prepared, marinated, and then quickly grilled. This creates aromatic grilled dishes for meat lovers and vegetarians alike in no time at all.

Here are three popular variations:

  • Chicken and bell pepper skewers
  • Tofu and vegetable skewers
  • Potato tornado skewers

Chicken and Bell Pepper Grill Skewers

Ingredients

600 g chicken breast

3 bell peppers

Marinade

1 clove garlic

2 tsp Asian spice blend

1 tsp lemon juice

5 tbsp canola oil

3 tsp sesame oil

Salt and pepper

Preparation

Finely chop or press the garlic and mix with lemon juice, oil, sesame oil, and the spice blend to form a marinade.

Pat the chicken breast dry and cut into bite-sized cubes.

Wash, core, and also cut the bell peppers into coarse pieces.

Mix the meat and bell peppers with the marinade and let them marinate in the refrigerator for at least 1–2 hours.

Then alternately thread the meat and bell peppers onto grilling skewers.

Grill the skewers over medium heat for about 10–12 minutes, turning regularly, until the chicken is cooked through.

Tofu and Vegetable Skewers (vegetarian)

Ingredients

250 g natural tofu

1 bell pepper

1 small zucchini

150 g cherry tomatoes

6 tbsp teriyaki sauce

1 tbsp canola oil

1 tsp sesame oil

Salt and pepper

Preparation

Drain the tofu and cut into approx. 2 cm cubes.

Mix with teriyaki sauce and marinate for approx. 30 minutes.

Wash the bell pepper and cut into pieces.

Cut the zucchini into approx. 1 cm thick slices.

Alternately thread tofu, zucchini, bell pepper, and tomatoes onto skewers.

Brush the skewers with a little canola oil and grill on the hot grill for 6–8 minutes, until the vegetables are lightly browned.

Finally, season with salt, pepper, and a little sesame oil.

Potato Tornado Skewers

Crispy potato spirals are a real eye-catcher on the grill and a popular side dish.

Ingredients

5 medium potatoes

80 ml canola oil

1 tsp pepper

2 tsp garlic salt

5 sturdy grill skewers

Preparation

Wash the potatoes thoroughly.

Insert a grill skewer through the center of each potato.

Using a knife, cut the potato spirally around the skewer.

Carefully pull the spiral apart.

Brush with oil and season with garlic salt and pepper.

Grill the potato spirals in the indirect grilling area for about 35–45 minutes, until they are soft and crispy on the outside.

Serving

Serve the grill skewers hot.

Particularly good with potato spirals:

  • Tzatziki
  • Sour cream
  • Herb quark
