Herb bread from the Dutch oven

Crispy bread with herbs and melted cheese

Fresh bread with melted cheese and aromatic herbs – straight from the Dutch Oven – is the perfect highlight for any barbecue evening or a cozy campfire.

This herbed bread from the fire is particularly easy to prepare and is ideal as a side dish for grilled food or as a snack for social evenings outdoors. Cutting the bread creates a delicious combination of crispy crust, melted cheese, and savory herb butter.

Ingredients

1 large round loaf of bread (e.g., rustic bread)

½ bunch parsley

½ bunch chives

1 small onion

1 clove garlic

20 g butter

2 tbsp olive oil

250 g Edam cheese

250 g Emmental cheese

Preparation

1. Prepare the bread

Using a sharp knife, score the bread in a grid pattern to create small cubes.

Important: Do not cut all the way through to the bottom so that the bread stays together.

2. Make the herb mixture

Finely chop the onion and garlic.

Also finely chop the parsley and chives.

Mix everything together with soft butter and olive oil to create a spreadable herb butter.

3. Fill with cheese

Cut the Edam and Emmental cheese into small strips.

Place the cheese pieces evenly into the cut slits of the bread.

4. Spread the herb butter

Generously spread the herb mixture over the bread and press it into the incisions as much as possible.

5. Bake the bread in the Dutch Oven

Place the bread in the Dutch Oven and close the lid.

Place the Dutch Oven to the side of the fire, not directly in the flames.

Place some embers underneath and put a few glowing briquettes or a small piece of burning wood on the lid.

Bake the herb bread for about 15-20 minutes, until the cheese is melted and the bread is crispy.

Serving

Serve the bread directly from the Dutch Oven and pull it apart – perfect for sharing.

It pairs particularly well with:

  • Grilled meat
  • Salads
  • Soups or stews
