Fluffy, traditional & perfect for Easter breakfast
For many, a homemade Easter bread is simply a must. Loose yeast dough, sweet raisins, and crunchy almonds make this traditional pastry a highlight on the breakfast table – whether with butter, honey, or jam.
In a Dutch Oven, Easter bread bakes particularly evenly and moist – with a wonderfully golden brown crust.
Ingredients

200 ml milk

100 g butter
-
550 g wheat flour (type 405 or 550)

100 g sugar
-
1 pinch of salt
-
1 cube fresh yeast (42 g)
-
100 g chopped almonds
-
100 g raisins
-
1 egg (for the dough)
-
1 egg + 1 tbsp milk (for brushing)

Sliced almonds or pearl sugar
-
a little flour for dusting
Preparation
1️. Prepare the yeast dough
Gently warm the milk (not hot, just lukewarm).
Melt the butter in it and let it cool slightly.
Mix flour, sugar, and salt in a large bowl.
Crumble in the yeast.
Add the milk-butter mixture and the egg.
Knead everything for about 8–10 minutes into a smooth, elastic dough (by hand or with a stand mixer).
Briefly knead in the raisins and almonds.
2️. First rising time
Cover the dough and let it rise for 60 minutes in a warm place until its volume has significantly increased.
3️. Shaping
Briefly knead the dough on a lightly floured surface.
Shape it into a round ball or a flat loaf (approx. Ø 22–24 cm).
Line the Dutch Oven with baking paper.
Place the dough inside and let it rise, covered, for another 30 minutes.
4️. Baking in the Dutch Oven
Score the surface crosswise.
Whisk the egg with milk and brush the bread with it.
Sprinkle with sliced almonds or pearl sugar.
🔥 Grill / Coals:
- Temperature: approx. 170–180 °C
- Bake with lid
- 8–10 briquettes on the bottom
- 14–16 briquettes on top
- Baking time: approx. 35–40 minutes
If the surface gets too dark, lightly cover it with baking paper towards the end.
Oven alternative
At 170 °C top/bottom heat
bake for approx. 35 minutes in the lower third.
Perform a skewer test.
💡Note on size
A 9QT Dutch Oven is ideal.
In smaller pots, the dough can rise too high and not bake completely through inside.
