Hearty, creamy & full of roasted flavors
Who doesn't know it: The smell of fried mushrooms, onions, and herbs wafting over the Christmas market. There's hardly a stall where you like to linger as much as at the mushroom stand.
The good news: You can easily prepare this savory comfort food at home – in a Dutch Oven over a fire outdoors or traditionally in a pan on the stove.
Ingredients (4 servings)
For the mushroom pan

1 kg mushrooms

125 g bacon cubes (optional)

3 onions
-
3 cloves of garlic
-
100 g cream cheese or Gorgonzola
-
300 ml vegetable broth
-
1 tbsp butter or oil
-
2 tbsp chopped parsley
Spices:
-
1 tsp salt
-
½ tsp black pepper
-
½ tsp paprika powder
-
Optional: 1 pinch of nutmeg
For the dip
-
50 g crème fraîche
-
50 g cream cheese
-
50 g Greek yogurt
-
1 small clove of garlic (finely grated)
-
Salt & pepper
-
1 tbsp chopped parsley
Preparation
1. Prepare mushrooms
Wipe mushrooms clean only (do not wash, otherwise they lose their roasted flavor).
Halve larger specimens.
Cut onions into half-rings, finely chop garlic.
2. Sear mushrooms
Heat Dutch Oven or large pan strongly.
First, add mushrooms without fat and fry for 4-5 minutes until they release water and it has largely evaporated.
Only then add butter or oil – this gives them intense roasted aromas.
3. Onions & bacon
Add onions and bacon and fry until golden brown.
Add garlic shortly before the end (otherwise it burns quickly).
4. Deglaze & make creamy
Deglaze with vegetable broth and reduce for 5 minutes.
Stir in cream cheese or Gorgonzola until everything is creamy.
Season with salt, pepper, paprika powder, and nutmeg.
Finally, fold in parsley.
Prepare dip
Mix all ingredients until creamy and chill until the mushroom pan is ready to serve.
Serve
Serve hot – ideal with fresh baguette or country bread.
In mini Dutch ovens, the dish stays warm for an especially long time.
💡Tip
- Vegetarian version simply without bacon
- Even more aromatic with a little white wine instead of broth
- Perfect for winter grilling or cozy evenings in the garden
