Tacos with spicy minced meat filling and guacamole

Tacos are one of the most famous dishes in Mexican cuisine. Filled with spicy ground beef, fresh ingredients, and creamy guacamole, they are perfect for a cozy evening with friends or an uncomplicated family meal.

This recipe combines juicy chili made from ground beef, beans, and corn with melted cheddar and fresh avocado – a simple yet incredibly flavorful combination.

Ingredients (for approx. 4 servings)

Tacos

8 mini tortillas
100g grated cheddar
¼ bunch parsley


Chili Filling

400g ground beef

250g kidney beans (drained)

100g corn

6 tomatoes

1 red onion

2 cloves garlic

¼ bunch parsley

Spices

2 tsp paprika powder
1 tsp cumin
½ tsp chili powder (to taste)
Salt and pepper


Guacamole

2 avocados

1 tomato

½ lime (juice)

½ tsp salt

Jalapeño (optional, depending on desired heat)


Preparation

1. Prepare the Chili Filling

Heat some oil in a pot or Dutch Oven.

Brown the ground beef until crumbly and lightly roasted.

Add the diced onion and sauté briefly.

Finely chop the garlic and add it as well.

2. Cook the Chili

Cut the tomatoes into small cubes and add to the meat.

Add kidney beans and corn.

Season with paprika powder, cumin, chili powder, salt, and pepper.

Simmer gently for about 10–15 minutes for the flavors to combine.

Finally, stir in the chopped parsley.

3. Prepare the Guacamole

Finely dice the tomato and jalapeño.

Halve the avocados, scoop out the flesh, and mash with a fork.

Mix with diced tomatoes, jalapeño, and lime juice.

Season with salt.

4. Fill the Tacos

Fill the tortillas with about 2–3 tablespoons of chili filling.

Sprinkle grated cheddar over them.

Heat the tacos briefly in the oven or on the grill until the cheese is melted.

5. Serve

Finally, add a spoonful of guacamole to the warm tacos.

Garnish with a little fresh parsley and serve immediately.
