Crispy from the grill or campfire
Fresh waffles under the open sky – it doesn't get much better. Whether on the grill, over a fire bowl or directly at the campfire: with a cast iron waffle maker, you'll get waffles that are crispy on the outside and fluffy on the inside, with a wonderful roasted aroma.
Here's a simple basic recipe for Belgian waffles – perfect for outdoor cooking.
Belgian Waffles – Basic Recipe
Ingredients (for approx. 6–8 waffles)

250 g flour

1 tsp baking powder

40 g sugar
-
1 pinch of salt
-
3 eggs
-
150 g soft butter
-
200 ml milk
-
a little oil for greasing
Optional:
-
1 tsp vanilla sugar
-
a little lemon zest
Preparation
Prepare waffle batter
- Cream soft butter with sugar (and optional vanilla sugar).
- Beat in eggs one by one.
- Mix flour, baking powder, and salt.
- Alternately stir the flour mixture and milk into the butter mixture.
The batter should be thick.
👉 Important: Let the dough rest for 10–15 minutes – this will make the waffles lighter.
Baking waffles in the outdoor kitchen

Lightly oil the waffle iron and preheat it over medium heat.
(Do not place directly into strong flames – better over embers or indirect heat.) - Work with grill gloves – the entire cast iron will get hot.
- Once the iron is well preheated, spoon a ladle of batter into the center.
Close the iron. - Place over the embers and turn regularly.
⏱ Baking time: approx. 4–6 minutes – depending on the heat.
👉 Tip: Don't open too early. Only when a light waffle scent develops and hardly any steam escapes, carefully check. This prevents the dough from sticking.
Serving
Golden brown waffles with:
- Powdered sugar
- Fresh berries
- Maple syrup
- Cream
- or simply enjoy plain
Heat Tip
Moderate, even embers are ideal.
Too much heat will burn the outside of the waffle while the inside is still raw.
For gas or kettle grills:
approx. 180–200 °C indirect heat.
